Ideal for sugar decorations and pulled sugar work, these Isomalt granules are a natural sugar substitute. Ideal for making figures in sugar, pulled sugar work and used in silicone moulds & mats. Recommended as a sugar substitute in the preparation of products for diabetics, isomalt, this is the perfect sugar substitute for preparation of food products for diabetics. Its sweetening power is half that of sugar.
Instructions for use:
Isomalt (Crystal Decor) is a product with a melting point in 180 °: Before handling it is necessary to wear gloves resistant to high temperatures. We recommend using metal utensils.
Place a small amount of the isomalt crystals dry in a silicone container, as this is resistant to high temperatures. Pop the isomalt on a melting temperature in the microwave for about 5 min 600W (100g). The coloured isomalt cannot be melted at high temperatures. If solidifies during microwaving, warm slowly. Once it has melted into a smooth and clear sticky liquid, gently mix. It is then ready to use for pulled sugar work or for pouring into silicone moulds.
Once melted, you can add a few drops of colour gel and stir gently until mixture is smooth and had reached your desired colour. When the isomalt has cooled you can paint on the surface with edible dusts mixed with alcohol. The isomalt can be re-worked, up to 3 times.
