Vintage but Vogue
Originally popular in the 1930s, the Lambeth cake was the bee’s knees with its elegant design of piped borders and layers of intricate and elaborate patterns like shells, scallops and pearls using royal icing. This time around (and avoiding teeth breakage 😂) it’s all about using soft, delicious buttercream to recreate that nostalgic effect.

👍 Don’t worry about getting a really sharp neat edge on the top of your cake – you’re gonna cover it up!
❄️CHILL your base until it’s hard before you start to pipe
🤭 Make sure your buttercream is the right consistency to hold the lines of the nozzle – no-one wants a droopy Lambeth!
🙌 Avoid smudging by piping the layer around the bottom and top, then chilling for 5 mins before adding the next colour or row
😅 DON’T PANIC if you mess up! The beauty of these cakes is that you can always add more piping to cover up mistakes.
